White Bean Chicken Chili



Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1 (4 ounce) can diced jalapeno peppers (I used 1 fresh jalapeno instead)
  • 1 (4 ounce can chopped green chile peppers
  • 1 cup frozen corn
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pper
  • 2 (14.5 ounce) cans chicken broth
  • 3 cups chopped chicken breast (or keep it whole and shred it at the end)
  • 3 (15 ounce) cans white beans
  • 1 cup shredded Monterey Jack Cheese

Directions:
Put all ingredients in the slower cooker on high for 6 hours.  

Serve with shredded cheese, avacado, sour cream or salsa!
