Super Easy Chicken Enchiladas

Need something easy and delish to make for dinner tonight?  Try this recipe curtosy of my sweet grandma for easy chicken enchiladas!

Ingredients:
  • 1 small red pepper, finely chopped
  • 1/4 onion, finely chopped
  • 1 can of chicken, shredded (you can also shred a cooked chicken breast, shredding it in the can with a fork is just faster)
  • 1 can of Progresso Enchilada Soup
  • 2 cups sharp cheddar cheese
  • flour or corn tortillas
Directions:
  • For the filling mix chopped red pepper, onion, shredded chicken, 1 cup cheese, and half a can of enchilada soup in a bowl.
  • In a glass baking pan pour a little bit of the left over soup in the bottom of the dish so it is lined with soup to prevent the enchiladas sticking to the pan.
  • Place two spoonfulls of the filling mixture on the tortilla, wrap tortilla like an enchillada, and place in pan.  Fill the pan with these enchillada rolls.
  • Cover the rolls in the pan with the remaining soup and 1 cup of shredded sharp cheddar cheese.
  • Bake at 350 for 15 mins.
